Zucchini Cake

This is a new recipe that I love to make and take to family events. It has been to quite a few, and has even been made for others to take to potlucks. Don't let the name fool you, it doesn't even taste like Zucchini!

Servings: 24 pieces
  • 2 1/4 cups all-purpose flour
  • 2 1/4 cups white sugar
  • 3/4 teaspoon sea salt
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1 3/4 teaspoons ground cinnamon
  • 3/4 teaspoon vanilla extratct
  • 3 whole eggs
  • 3/4 cup vegetable oil
  • 2 1/4 cups grated zucchini

Ingredients for Cream Cheese Frosting

  • 8 ounces cream cheese
  • 1/2 cup butter
  • 2 cups confectioners sugar
  • 2 teaspoons vanilla extract
Directions
  1. Preheat oven to 325 degrees F. Lightly grease and flour a 9 x 11 cake pan.
  2. In a medium sized bowl, combine the flour, baking soda, baking powder, cinnamon, white sugar and salt. Mix well.
  3. In another bowl, beat the eggs, vegetable oil and 3/4 teaspoon vanilla extract together.
  4. Pour the egg mixture into the flour mixture and mix well.
  5. Stir in shredded zucchini and mix well.
  6. Pour batter into prepared pan.
  7. Bake at 325 degrees F for 35-40 minutes until a toothpick inserted into the center of the cake comes out clean. Allow cakes to cool in pans.

To make frosting:

  1. Cream together the cream cheese and butter.
  2. Add the confectioners sugar a little at a time, mixing well.
  3. Add 2 teaspoons vanilla and spread on your cake.
